carne asada nacho fries

I love me some nachos. I love a good crispy fry too. But, if you know me, I love to put a healthy twist on about anything I can. The base of these Carne Asada Nacho Fries are baked, perfectly golden potatoes cut into fry shape, topped with lean protein - carne asada - and quality healthy fats with organic cheddar cheese and freshly-made guacamole. Not only then are these Carne Asada Nacho Fries straight up fireeee, but they’ve got a balance of protein, carbs and healthy fats.

Ry and I were eating them as a post-workout meal, and were eating them so fast because we didn’t want the other person getting more. That’s how much we loved them.

The recipe is rather simple but one key ingredient is a good queso. My favorite healthy store-bought quesos are from Mother Raw and Siete. Also, if you are local to Southern California, one of my favorite restaurants, Greenleaf Chopshop has an amazing vegan nacho aioli that I always get extra servings of when I order take-out and put it on just about everything, including these Carne Asada Nacho Fries.

Ingredients:

  • Russet potatoes

  • Carne asada

  • Queso

  • Shredded cheddar cheese

  • Guacamole (mashed avocado, cilantro, lime, sea salt and pepper)

  • Cilantro

Instructions:

For the baked potato fries, I cooked them on a parchment-lined baking tray, sprayed with avocado oil, seasoned with Savory Spice Shop taco seasoning and cooked at 400 degrees for 35 minutes, flipping halfway through. Then, I topped with the cooked carne asada (also cooked with the same taco seasoning blend), followed by the queso, cheddar cheese, guacamole and fresh cilantro.
