no sugar added banana double chocolate chip muffins

I am my own biggest hype girl for my No Sugar Added Banana Walnut Muffins but wanted to whip up a chocolate version - with yes, still no added sugar (depending on the protein powder and chocolate chips you use, of course).

You know you’ve created a winner when your husband (who always has either peanut butter M&Ms or Reese’s in our freezer) told me to save him at least half and not give them away to other friends or family. They are a very moist muffin with a good source of protein in each of them. I personally love having one as a pre-workout snack or on top of my nightcap yogurt bowls.

INGREDIENTS:

  • 3 ripe bananas, mashed

  • ½ cup coconut flour

  • 2 scoops of chocolate protein powder

  • 1 cup unsweetened almond milk

  • ¼ cup unsweetened apple sauce

  • 2 eggs

  • 1 tbsp cacao powder

  • 1/4 tsp baking powder

  • 1/4 tsp baking soda

  • Chocolate chips

INSTRUCTIONS:

Preheat the oven to 350 F. In a large bowl, mash the bananas and fold in the eggs, unsweetened almond milk and unsweetened apple sauce. Then, add in the coconut flour, protein powder, cacao powder, baking powder and baking soda. Once the wet and dry ingredients are mixed together, fold in the chocolate chips. Next, either spray a muffin pan with coconut oil spray or place cupcake liners in the muffin pan, and spoon the batter equally into each cup. (You should have enough batter for 12 muffins - unless you eat too much of the batter of course). Top with more chocolate chips. Bake for 30 minutes, or until a toothpick comes out clean.
