No Sugar Added Banana Walnut Muffins

When it comes to muffins, a moist - yes, I said it and let me say it again, MOIST - interior is a non-negotiable. I knew I had a winner with these No Sugar Added Banana Walnut Muffins when I had to restrain myself from eating all of the batter. An added bonus is that these muffins are a good pre-workout snack with bananas as a simple carb source for fuel and to replenish the glycogen depletion in your muscles during your workout. The eggs and protein powder are fast digesting proteins that will help with muscle growth, prevent muscle damage and promote recovery. Spread some peanut butter on one, and you have yourself and easy peasy pre-workout snack. I will say though, these are just as good in a yogurt bowl with some sliced bananas, honey and cinnamon.

Ingredients:

  • 1 cup ripe banana, mashed

  • ½ cup coconut flour

  • 2 scoops of vanilla protein powder

  • 1 cup non-dairy milk (like almond or coconut milk)

  • ¼ cup unsweetened apple sauce

  • 2 eggs

  • 1 tsp vanilla extract

  • Pinch of baking powder, baking soda and cinnamon

  • Walnuts, chopped

Instructions:

Preheat the oven to 350 F. In a large bowl, mash the bananas and fold in the eggs, almond milk, unsweetened apple sauce and vanilla extract. Then, add in the coconut flour, protein powder, baking powder, baking soda and cinnamon. Once the wet and dry ingredients are mixed together, add in the walnuts. Next, spray a muffin pan with coconut oil spray and spoon the batter equally into each cup. (You should have enough batter for 12 muffins - unless you eat too much of the batter of course). Top with more walnuts and cinnamon. Bake for 30 minutes, or until a toothpick comes out clean.

INGREDIENTS:

  • ½ cup dairy-free cream cheese

  • ¼ cup dairy-free plain yogurt

  • ½ scoop of vanilla protein powder

Instructions:

Add all these protein frosting ingredients together into a mixing bowl and use an electric mixer to create a smooth, frosting-like texture. Refrigerate the frosting until the muffins are cooled. Once muffins are baked and cool, spread a thick layer of frosting on each of the muffins. Sprinkled with more cinnamon.

Store these muffins in your refrigerator - they are actually even better enjoyed cold.
