Applesauce Sugar Cookies

The best way to spread Christmas cheer is singing loud for all to hear….or sharing these APPLESAUCE SUGAR COOKIES with ya friends ‘n fam.

If you’ve made my Uber Low Sugar Chocolate Chip Cookies, you know unsweetened applesauce is a key ingredient - so, for my take on a healthified sugar cookie recipe, I let unsweetened applesauce make its way in again.

These cookies are soft and chewy, have no refined sugar and are unintentionally low in fat too - giving you a holiday treat where you can "have your cake and eat it too”… or cookies in this case.

INGREDIENTS:

  • 1 ½ cup flour (I used Bob’s Red Mill 1:1 gluten free flour)

  • 2/3 cup granulated monkfruit sweetener

  • ½ cup unsweetened applesauce

  • 1 egg

  • 1 tsp vanilla extract

  • ½ tsp baking powder

  • ¼ tsp salt

INSTRUCTIONS:

Start by preheating your oven to 350 degrees. Combine the applesauce and monkfruit sweetener together, then add in your egg and vanilla extract. In a separate bowl, mix together the flour, baking powder and salt and then add to the wet ingredients. Roll the sugar cookie dough into balls (about a tablespoon size) and set on a parchment-lined baking tray. Put in the freezer to firm up the dough for about 20 minutes. Then, press down on each dough ball with a spatula and bake for 10 minutes. Let cool and spread each cookie with frosting. I love Simple Mill’s organic vanilla frosting - it’s made with clean ingredients and nothing artificial. For the final touch: Christmas-colored sprinkles.
