Uber Low Sugar Chocolate Chip Cookies
Chocolate chip cookies will forever be my OG fav dessert - followed by brownies and ice cream. In grad school - when I first started What Alec Eats - I was ahead of my time in that I use to mess around in the kitchen coming up with sweet treat recipes with limited added sugar. Some of those recipes failed (miserably), but one I nailed and went back to time and time again was this one for Uber Low Sugar Chocolate Chip Cookies.
Ingredients:
¼ cup peanut butter
¼ cup unsweetened applesauce
2/3 cup oat flour
½ tsp baking powder
1 tbsp honey
chocolate chips
Instructions:
Preheat oven to 350 F. Mix the dry ingredients and wet ingredients separately. Then, add together. Fold in the chocolate chips last. Roll into 7 balls and put them in the freezer to firm up for 20 minutes. Press down flat gently with a fork and then bake for 10 minutes.
For the skillet version of this recipe, simply double the ingredients and bake in a skillet or round cake pan (sprayed with avocado oil, ghee or coconut oil) for 15 minutes (versus 10 minutes), or until you can stick a toothpick into the cookie skillet and nothing comes out on the toothpick.
