S’more Cake Bites
A s’more recipe you’ll want s’more of. And, because I am predictable (in the best kind of way), yes – these are protein packed.
Ingredients:
For the Crust:
1 box of (chocolate) graham crackers
⅓ cup coconut oil
For the Cake:
3 scoops of chocolate protein powder (i used Prana On)
¼ cup unsweetened apple sauce
2 tbsp egg whites
2 tbsp unsweetened cocoa powder
2 tbsp peanut butter
Instructions:
Preheat oven to 375 F. For the crust, throw the graham crackers in a food processor until you make crumbs. Mix with melted coconut oil. Firmly pack crumb mixture into coconut oil-sprayed muffin tins and bake for about 5-7 minutes. Meanwhile, mix all the ingredients for the cake with a hand mixer and after you’ve baked the crust for 5-7 minutes, remove from the oven and press equal parts of the cake mixture into each of the muffin tins. Bake for another 10-12 minutes, or until you poke with a toothpick and nothing sticks. Top with marshmallows and broil for about 30 seconds.
