Homemade Butter Biscuit Breakfast Sammie
Breakfast is by far the best meal of the day. I mean, think about it - you’ve got pancakes, waffles, avocado toast, eggs, breakfast burritos… ohhh the list could go on. I am especially a sucker for a flaky, buttery biscuit, and give that to me in sandwich form with soft scrambled eggs, crispy bacon and creamy avocado and I am one happy foodie. After years of being a biscuit connoisseur, I made my own and know that you will love them just as much as me.
Ingredients:
½ cup coconut flour
¼ tsp baking soda
¼ cup melted ghee
4 eggs
¼ tsp sea salt (and more for sprinkling on top)
Instructions:
Preheat the oven to 350 F. Mix dry ingredients together, then add in melted ghee and follow by whisking in eggs. Once all the ingredients have been combined, use a large cookie scooper to scoop out dough and drop each ball on a parchment paper-lined baking sheet. Sprinkle with more sea salt. Bake for 20 minutes.
