Banana Peanut Butter Donuts with a Peanut Butter Glaze and Bacon Brittle
I am a sucker for a good donut and really anything with peanut butter on it. But, when it comes to raised versus cake donuts, i will choose the cake donut every time. I love me a moist cake donut with toppings galore – and these Banana Peanut Butter Donuts with a Peanut Butter Glaze and Bacon Brittle were an (easy) labor of love that filled that craving perfectly.
Ingredients:
1 cup of pancake mix (I used Birch Benders banana paleo mix)
3 very ripe bananas
1 egg
¼ cup + 2 tbsp powdered pb (I love Lakanto)
A splash of almond milk
1 tsp cinnamon
2 pieces of bacon
1 tbsp maple syrup
Instructions:
For the Banana Peanut Butter Donut:
Preheat the oven to 350 F. In a large bowl, mash the bananas and fold in the egg. Then, add in the pancake mix, 2 tbsp of powdered pb and cinnamon. Once the wet and dry ingredients are mixed together, spray a donut baking pan with coconut oil spray and spoon the batter into the baking pan. Bake for 15 minutes, or until a toothpick comes out clean. Allow to cool for 5 minutes before adding the peanut butter glaze and bacon brittle (see below).
For the Peanut Butter Glaze:
Mix ¼ cup powdered pb with just enough almond milk to create a thin, syrup-like consistency. Drizzle over the cooled donuts.
For the Bacon Brittle:
Cook bacon in a frying pan and once crispy, remove from heat, cut into small pieces and drizzle with maple syrup while still warm. Add on top of peanut butter glazed donuts.
Just like that, breakfast and dessert are served.
