I am years behind on the cauliflower gnocchi trend, but decided if I was going to finally make it, I’d leave a new lasting impression on this frozen Trader Joe’s staple. Cue, my recipe for Cacio E Pepe Cauliflower Gnocchi.

I fell in love with cacio e pepe in Italy during the summer of 2019 when Ryan and I visited the country for a wedding. I consider myself a pizza kinda girl and honestly, pasta just never does it for me. But - when in Italy, the cacio e pepe there stole my heart. For the two weeks we were there, if it was on the menu, I ordered it. I ordered the cacio e pepe and the pizza and the gelato - because, when in Italy, you don’t hold back.

One of my biggest inspirations in the kitchen is the food I am exposed to when traveling. I always come home from trips eager to re-create dishes I tasted while traveling. If you know me though, I do like to put a healthy twist on all my recipes and that reigned true with this recipe. I focused on simple, high-quality ingredients to create this simple, cheesy, perfectly peppery Cacio E Pepe Cauliflower Gnocchi.

INGREDIENTS:

  • 1 bag of Trader Joe’s cauliflower gnocchi

  • ½ cup Pecorino Romano

  • 3 tbsp Extra Virgin Olive Oil

  • ½ tsp ground black pepper

INSTRUCTIONS:

Ideally you want an air fryer for this recipe. Start then by spraying some avocado oil on the air fryer tray/basket. Cook the cauliflower gnocchi in the air fryer at 375 for 15 minutes, tossing occasionally. Meanwhile, toss the remaining ingredients in a mixing bowl and stir to form a paste-like texture. When the cauliflower gnocchi is cooked and crispy, toss them in the mixing bowl with the other ingredients and coat.
