Mexican Roasted Cauliflower with Salsa Verde and Bacon
If you are looking for a new way to enjoy cauliflower - this side dish could easily take center stage for any meal and takes just 4 ingredients to whip up.
Ingredients:
1 head of cauliflower
1 jar of salsa verde (I love Trader Joeβs)
4 slices of bacon
Taco seasoning
Instructions:
Preheat oven to 425 F. Toss cauliflower florets with avocado oil and sprinkle with taco seasoning. Then, brush with salsa verde and bake for 25-30 minutes, tossing halfway. Meanwhile, cut up the bacon and cook in a skillet, until crispy. Once the cauliflower is baked to perfection, toss in a bowl with the bacon and some more salsa verde.
