twix stuffed dates
My homemade healthified take on Twix candy bars is one of my favorite sweet treat recipes, and as I was prioritizing eating 2-3 dates a day during the latter part of my pregnancy, I decided to take the wafer cookie part of my homemade Twix bar recipe and stuff it into a date, which already has a naturally sweet, caramel-like flavor.
Pregnant or not, these Twix Stuffed Dates are the perfect bite-size sweet treat.
Ingredients
Dates
¼ cup almond flour
¼ cup coconut flour
3 tbsp coconut oil, melted and cooled (plus more for melting the chocolate chips)
2 tbsp raw honey
Chocolate chips
Instructions
For the “Twix bar” stuffing, whisk together the almond flour, coconut flour, 3 tbsp of coconut oil and honey. Stuff a bit of that mix into a sliced, de-pitted date and put the stuffed dates in the freezer for about 20-30 minutes to firm up. Then, drizzle melted chocolate over top each date. To melt the chocolate, I add the chocolate chips to a bowl with a small dollop of coconut oil and put in the microwave for 20 seconds, stir and for then again another 20 seconds. Finish off by sprinkling the dates with sea salt.
