almond parmesan crusted salmon

If there were five foods I had to pick to eat forever, salmon would be at the top of that list. I would also include hummus, peanut butter and cereal in that mix and probably a good burger. Some of those might be interchangeable, but salmon will forever be in that mix. I actually joke that salmon is my spirit animal - those suckers are persistent little things as they swim upstream. IT ME.

As for this recipe, I will actually preface that 9 times out of 10 I would prefer my salmon simply seasoned and cooked in a cast iron skillet with avocado oil, extra crispy on top and medium rare in the middle. Yes, I am very particular. But, this almond parmesan crusted salmon baked in the oven is my exception to that. The salted almonds’ nutty flavor combined with the parmesan cheese make for the perfect crust on a good piece of salmon.

Ingredients (2 servings):

  • 2 pieces of salmon (4-6 oz each)

  • ¼ egg whites

  • ¼ cup salted almonds

  • ¼ cup parmesan cheese, grated

Instructions:

Preheat oven to 425 degrees. Pat the salmon dry, set aside. Put egg white in a shallow bowl. Throw almonds into a food processor and pulse until you get almost a flour consistency. Throw in parmesan cheese into the food processor and pulse a few times until the almonds and parmesan cheese bind together a bit. Put the almond parmesan mixture into a second shallow bowl. Once the prep work is done, coat the salmon in the egg white mixture and then the almond parmesan mixture. Spray a baking sheet with oil spray before laying almond parmesan crusted salmon down and bake for 20 minutes.
