chewy oatmeal cookie

If you are team “chewy” when it comes to cookies, these have your name written all over them. The texture of these chewy oatmeal cookies is very dense and they have the perfect amount of sweetness, without calling for any refined sugar in the recipe. I personally think that adding the chopped dates and walnuts into the chewy oatmeal cookie mix makes these cookies what they are, but feel free to experiment with other add-ins like dried cranberries and pecans, or dried blueberries and cinnamon dusted almonds.

Personally, I love to crumble them up and add them to a yogurt bowl, or I will eat one as a pre-workout snack early in the morning before a high-intensity workout.

Ingredients:

  • ¼ cup egg whites

  • ½ cup Lakanto’s golden monkfruit sweetener (or coconut sugar)

  • 1 cup unsweetened applesauce

  • 1 cup gluten-free flour

  • 1 cup oats

  • 1 tsp vanilla extract

  • ½ tsp baking soda

  • ½ tsp cinnamon

  • Dates, chopped

  • Walnuts, chopped

Instructions:

Preheat oven to 350 F. Whisk the egg whites in a bowl, then add in the monkfruit (or coconut) sugar, unsweetened applesauce and vanilla extract. Next, add in the flour, oats, baking soda and cinnamon. Fold in chopped dates and walnuts last. Roll into tbsp-size balls. Bake for 10 minutes.
