Apple Spice Protein Pancakes
As much as I am a sucker for any and all things pumpkin in the fall, these protein-packed apple spice pancakes have stolen my heart and - while this might be bold to say - I am not sure I need a pumpkin pancake ever again after bringing these into the world. The smell alone will transport you to an apple orchid. And, just like all my protein pancake recipes - these are super fluffy, dense and will fill that pancake craving without the sugar crash after.
INGREDIENTS:
1 egg
1/3 cup unsweetened apple sauce
1/3 cup unsweetened almond milk
¼ cup pancake mix
¼ cup salted caramel or vanilla protein powder
A pinch of cinnamon (Vietnamese ground Saigon cinnamon is the best, in my opinion)
INSTRUCTIONS:
Add all wet ingredients to a bowl and mix. Then, add in dry ingredients to the bowl, and mix until there are no clumps. Pour the mix over a heated pan or skillet, coated with a generous layer of coconut oil and cook until side is perfectly golden.
I topped mine with sautéed honey crisp apple chunks, vanilla granola butter and a little maple syrup.
For the apples, I simply sautéed them in a non-stick skillet with coconut oil, cinnamon and coconut sugar.
