Chunky Monkey Muffins
Just gonna leave this little sweet treat here for ya, because posting a vegetable today just isn’t in me. But (if) you know me, these don’t have any added sugar, so basically it is a salad.
Ingredients:
6 dates (soaked for 30 mins in water, pits removed)
1 ripe banana
½ cup plain Greek yogurt (use full fat)
1 cup chunky peanut butter (tbh, you can use whatever nut butter your little heart desires)
Pinch of salt
Chocolate chips
Instructions:
Preheat the oven to 350 F. Throw everything but the chocolate chips into a food processor and blend. After that, fold in chocolate chips and scoop mixture into greased muffin tins. Top with more chocolate chips and bake for about 15 minutes, or until a toothpick comes out clean.
Tip: I like to store them in the fridge – I actually think they taste best cold.
