healthy spinach artichoke dip
I am all about dipping into some lighter snacks and apps - wings, air-fried bites and basically anything I can dunk some veggies into. Hummus. Guacamole. Tzatziki. I really can’t get enough of dips. As much as I love the cheesy dips, I want to opt for ones with a healthy twist so I don’t feel… “blah” after enjoying them. Cue this Healthy Spinach Artichoke Dip. It’s easy, cheesy, warm, packed with some protein and a true crowd pleaser.
ingredients:
14oz can of artichoke hearts, cut into small pieces
2 cups frozen spinach
1 cup Greek yogurt
½ cup cream cheese, at-room temperature
1 cup mozzarella cheese, shredded
½ tsp pepper
½ garlic powder
Instructions:
Preheat your oven to 400 degrees. In a bowl, mix all ingredients until thoroughly combined. Pour dip mixture into a medium baking dish. I used one that was 11” x 8.” Top with extra mozzarella cheese, if desired. Bake for 25 minutes. Broil for 1-2 minutes to get the cheese on top a little melty and bubbly. Serve with chips or veggies, like carrots.
You can store this Healthy Spinach Artichoke Dip in your fridge for 3-4 days. You can also prep it the night before.
