hummus crusted salmon

Some people are bad ass bakers. Some are a master on the grill. I like to play my part by giving you major salmon inspo. I could literally eat salmon everyday - and while I most often prepare it simply pan-seared with avocado oil and a mix of seasoning blends, I will deviate from the norm every once in a while. This Hummus Crusted Salmon concoction is definitely one of those instances where deviating from the norm always plays out well for me.

However, I refuse to call this a “recipe” because it’s more of a concoction. It’s like when people put Trader Joe’s vegan kale pesto, chicken sausage and cauliflower gnocchi together and call it a recipe. That’s a concoction boo boo.

Regardless, here’s a Hummus Crusted Salmon concoction that will be sure to put a smile on your face and make your belly reaaal happy.

Ingredients:

  • Salmon

  • Hummus

  • Olive oil

  • Dried oregano

  • Garlic powder

  • Sea salt

  • Pepper

Instructions:

Simply coat the salmon with olive oil then spread hummus over the top and sides and sprinkle with oregano, garlic powder, sea salt and pepper. Put the coated salmon in a pre-heated air fryer at 400 degrees for 10 minutes, or you can bake at 425 degrees for about 20 minutes.

I served it here with cauliflower rice sautéed with avocado oil, oregano, garlic power, sea salt and pepper & a cucumber, tomato and feta salad tossed with olive oil, fresh lemon juice, sea salt and pepper.
