ranch dip chicken

Ryan is always down for some Ruffles and ranch dip - and because healthifying some of Ryan’s favorites is a challenge I am always up for, I decided to take those flavors and put them in a chicken marinade. Cue, Ranch Dip Chicken. If Ryan could have his way, he’d have me serve this chicken up with some Ruffles crumbled on top - which now that I think of it, sounds amazing. But this bowl I paired the Ranch Dip Chicken with looks pretty fab too.

INGREDIENTS:

  • 4 organic chicken thighs

  • Olive oil

  • ¼ cup plain greek yogurt

  • ½ tsp onion powder

  • ½ tsp dried parsley

  • ¼ tsp salt

  • ¼ tsp black pepper

  • ¼ tsp dill weed

INSTRUCTIONS:

Preheat your air fryer to 370 degrees (or 425 degrees for your oven). Coat the chicken with olive oil. Mix greek yogurt with spices. Coat chicken with greek yogurt mix. Let marinate for at least 30 minutes. Cook in the air fryer for 12 minutes, flipping halfway through (if cooking in the oven this timing should work too, but i always check by cutting into them).
