Bananas 'N Cream Protein Waffle
When I go out for breakfast or brunch, I never order pancakes or waffles - but at home, on the weekends - I crave them regularly. Probably because my healthified take on pancakes and waffles doesn’t leave me feeling like I need to unbutton my pants nor do I feel lethargic from the sugar spike and fall that happens shortly after eating traditional pancakes and waffles. I hate walking away from a meal feeling like that.
This recipe for a Bananas ‘N Cream Protein Waffle has no added sugar and has over 20 grams of protein packed into it (depending on what protein powder you use) and doesn’t compromise on flavor. This same recipe can be used to make pancakes too.
INGREDIENTS:
1 very ripe banana
1 egg
1/3 cup unsweetened almond milk
¼ cup oat flour or pancake mix
¼ cup vanilla protein powder
½ tsp baking powder
A pinch of cinnamon (Vietnamese ground Saigon cinnamon is the best, in my opinion)
INSTRUCTIONS:
Mash the banana in a bowl. Add the egg and milk, and mix. Then, add in dry ingredients to the bowl, and mix until there are no clumps. Pour the mix into a heated waffle maker and let it work its magic.
I like to top mine with banana slices, plain yogurt and peanut butter mixed with a little maple syrup.
