white chocolate covered peanut butter protein balls
These babies are a deviation from my Uber Low Sugar Chocolate Chip Cookies recipe and are still very much low in sugar (less than 5g of sugar per ball and no refined sugar), packed with some protein and require zero baking. The holiday sprinkles bring to life the Christmas spirit and make them the perfect treat - one that you deserve to gift ya self.
Ingredients:
¼ cup peanut butter
¼ cup unsweetened applesauce
2/3 cup oat flour
½ serving of vanilla protein powder
1 tbsp honey
white chocolate chips
holiday sprinkles (optional, but not really)
Instructions:
Mix the oat flour and protein powder in one bowl and the peanut butter, applesauce and honey in another. Then, add together. Fold in some white chocolate chips. Roll into 8 balls and put them in the freezer to firm up for 20 minutes. Then dip in melted white chocolate. I microwaved Lily’s no-sugar-added white chocolate chips with a little coconut oil. Finish off by dropping each white chocolate-dipped peanut butter protein ball onto parchment paper and add the sprinkles.
Let set in the fridge for at least 30 minutes before enjoying. Store them in the fridge too.
