Protein Chocolate Chip Pancakes
Chocolate chip pancakes are Ry’s favorite thing for breakfast, but of course I had to find a way to add nutritional value to them. These cakes get super fluffy on the inside and crisp up nicely on the outside. And, a true testament to the success of these is the fact that Ry requests these regularly.
Ingredients:
1 cup your favorite pancake mix
1 scoop of protein powder (I used vanilla)
¼ cup plain yogurt
1 egg
1 cup unsweetened almond milk
2 tbsp coconut oil (melted, then cooled)
Chocolate chips
Instructions:
Mix all ingredients other than the pancake mix and protein powder in a large bowl. Then, add those two in. Heat a lightly oiled griddle or frying pan over medium high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake. Brown on both sides and serve hot. Go all out and drizzle maple syrup on these bad boys.
